Why do you wrap Filet Mignon in bacon?

Wrapping the Filet Mignon in bacon is mainly to hold in the juices. It also provides extra fat and flavor to the filet if the Filet is seared properly.

Place the steaks 3 to 5 inches from the flame to sear the outside and seal in the juices. Sear the steaks for 2 to 3 minutes on each side. After the steaks have been seared on both sides, remove from heat, and brush both sides with extra virgin olive oil. This will help form the crust that adds the touch of perfection.

How many times do you flip a filet mignon on the grill? ›

How long do you grill a filet mignon on each side? ›

Many cooks argue that the perfect filet mignon is served at a temperature of 120 to 130°F, otherwise known as medium rare. To achieve that “perfect” doneness, cook your 1.5 to 2-inch filet for approximately 3.5 to 4.5 minutes per side.

Do you put oil on a filet before grilling it? ›

Before it hits the Grill

It's best to add oil directly to the steak and not to the grill as oil will burn quickly on the grill causing excess smoke and flare-ups. Season the steak with salt, freshly ground pepper and your choice of other spices, just before placing it onto the hot plate or grill.
