No Bake Protein Bars for the WIN! I fell head over heals in love with the blueberry RX bars. They are my secret weapon for surviving traveling.

As many of you know, there aren’t amazing allergy-friendly food options in airports. You can’t just pack your bags, you have to be prepared!

One day “my” store suddenly stopped stocking blueberry RX bars. WHAT!?! Oh, the humanity.

I was heading to a conference the next day and needed a snack for the flight.

Lindsay + No Enough Food = CRASH AND BURN.

I’m not a fabulous traveler to begin with because I just simply NEED food to survive. I mean, I know I could survive some time without food, but my brain turns to just mush and my patience becomes non-existent – nobody wants that.

To avoid this predicament, no bake protein bars to the rescue!

So while my store for some reason stopped stocking my beloved blueberry RX bars, we have a backup plan with these homemade Blueberry No Bake Protein Bars.

I’m obsessed with these bars. I did find out Amazon stocks my blueberry RX, but if you don’t have access to Amazon or are simply in the mood to make your good-for-you food, these healthy protein bars are a perfect way to snack on the go and get your blueberry muffin craving fix.

No Bake Protein Bars are super simple and the perfect copycat recipe for those delicious RX Bars. The ultimate combination of protein-packed blueberry muffin flavor. Ingredients:

  • 1 1/2 cup pitted dates
  • 3/4 cup dried egg white powder
  • 1/2 cup whole almonds
  • 1/2 cup cashews
  • 1/2 cup dried blueberries

Directions:

  • 1. Prepare baking pan (8x8 or small bread pan) with parchment paper.
  • 2. Add everything to your blender, pulse 10-15 minutes until mixture binds together when rolled into a ball. (See Video Above for example)
  • 3. Press mixture into baking pan.
  • 4. Pull out of baking pan, slice with a sharp knife and store in a airtight container up to 7 days.

      Huh, did they form bars for you? The only thing I could think of is the dried blueberries might of caused the difference. I own a blendtec and that baby pulses them really well.. perhaps that could of been the difference too?

      Hi Krista! I would not recommend frozen blueberries – I have not tried it before but I imagine it would not work with this recipe.

    I LOVE this recipe! I use this recipe as a base and have made many variations with fruit (I have yet to tiptoe into the sweet/candy type rx bars). I use medjool dates and they seem to be the sweetest option. I also found it works best to soften them in the microwave for 30 seconds when the dates are kept in the fridge, it makes the mixture stick together better. I recently made tropical flavor. I followed the basic recipe – subbed pineapple for blueberries, used a little under 1 cup of almonds since I didn’t have cashews, added 1.5-2 tbsp of honey since the pineapple was a little sour, and added about 1/8 c of coconut flakes. They were a hit!! I’m going to try making apple cinnamon ones. THANK YOU FOR POSTING THIS – our daughter also thanks you!! It’s cheaper and we can get creative with flavors!!

    Why is only able to keep for a week? Dates by themselves keep for a while just on the counter.

      They can probably keep longer if stored in the fridge. I found that the egg powder after being mixed together began molding if left on the counter for too long. Ours was left in a sun spot by the counter so perhaps that was the reason for it as well.

    I’m curious if you’d be able to add more egg white powder? The RX bars I purchase in the store have 12-14g of protein and I’d love to be able to make these bars but get the protein a little higher. Any ideas on how to go about doing that? Thanks!

      Yeah I don’t see why not! What I would do is add a dash of water or so until the mixture comes together as you’ll definitely need to add some liquid to offset the additional powder. Hope this helps and good luck!

    Thanks for sharing. Just adding. I didn’t have the powdered egg whites, but did have liquid egg whites in the fridge. I used 3/4 cup of egg whites to 1 cup of nuts , about 5 dates, and 1/4 cup of frozen blue berries. The batter tastes amazing! They are in the oven right now. So no, they aren’t no bake – but so far they taste delish. Baking at 350 for 20 minutes in a parchment paper lined pan.

    Have fun everyone! I love that the basic recipe can be modified for whatever flavor profile you want. going to try a coffee flavor next.

    I really, really, REALLY like the RXbars, and they come in 16 flavors (plus a couple “for kids,” though the adults have to do the Amazon ordering, of course!). I like 11 of the flavors, with blueberry being pretty much my favorite, and I don’t even like blueberries!

    I’ll have to try making them with your recipe—should be an interesting challenge since I don’t have a kitchen in my miniscule studio apartment (so no blender, just a mini “sort of” food processor), but I’ll figure it out. I’ve learned how to cook and BAKE with my 1,000 watt microwave oven, so something that’s neither cooked nor baked should be fairly easy 🙂
